Actually it is a wig. Kirsten used wigs for the first two Spider-Man films.

The mesh for the wig is clearly visible near her temple.

She only wore a wig for the second film, I believe her hair was dyed for the first. When she had to do reshoots for Get Over It, wasn't her hair red?

Not quite. Kirsten got the role for the first Spider-Man film only a few weeks before filming started and her hair was too short. For part of the filming she had to dye the hair nearest her face red to match the wig she wore.
